  • Pineapple (Fresh Fruit or Juice)– Look for canned pineapple chunks without added sugar, or chop fresh pineapple into pieces. Alternatively, you can use pineapple juice instead.
  • Raw Honey – This acts as a natural sweetener and cuts some of the tang of apple cider vinegar. Pure maple syrup will also work.
  • Apple Cider Vinegar – Look for organic, raw, unfiltered apple cider vinegar with the mother like Bragg ACV. There should be no additives or sweeteners on the ingredient list!
  • Mint – Use fresh mint leaves to add bright, refreshing notes to the drink.
  • Spices – Cayenne pepper and ground turmeric add savory notes and a kick of heat.
  • Grated Ginger – Use freshly grated ginger, not ground ginger, for the best results.
  • Lime Juice – Freshly squeezed is best!

Ingredients

  • 1 cup pineapple chunks or ½ cup 100% pineapple juice
  • 2 Tablespoon raw honey or pure maple syrup
  • 2 to 4 Tablespoons apple cider vinegar, adjust to taste
  • 2 fresh mint leaves, chopped, plus extra to garnish
  • ¼ teaspoon cayenne powder
  • ¼ to ½ teaspoon ground turmeric, adjust to taste
  • ½ teaspoon grated ginger, optional
  • 1 to 2 Tablespoons lime juice
  • 6 to 12 ounces sparkling water, to taste
  • Optional: crushed ice and/or sliced lime to garnish

Instructions

  1. If using diced pineapple, place all the ingredients (minus the sparkling water, ice, and sliced lime) in a blender or if using pineapple juice, whisk all the ingredients (minus the sparkling water, ice, and sliced lime). Blend or whisk until combined. This creates the concentrated/base of the drink. Taste and adjust as needed (see notes).
  2. Pour the concentrated mixture into an airtight bottle and store in the fridge for up to 6 weeks.
  3. Once ready to drink, simply add sparkling water (start with 6 ounces then adjust to taste) and optional ice. Lime and mint to garnish.

Notes

        I just made it last night.
        I used fresh pineapple with no added juice. I’ve read so many recipes and facts about shrubs that say they could last over a year unrefrigerated. Then I’ve read the opposite.
        Being that they didn’t have refrigerators in colonial America I’m thinking the first is true.
        Although they may have consumed it within a few days back then.

            it’s been setting for almost 3 days on the counter. I tasted it yesterday and it’s really good. sometime around the 4th day I’ll strain it and put it in 8oz bottles. I’m a vendor at the local farmers market.
            I’m gonna check the pH after I strain it. If it’s below 4 it should be stable.

      I use anywhere between 2-3 ounces and then add sparkling water or kombucha, etc. Splash of tequila if you want it a co*cktail. Taste and see how strong the 2 ounces is to your liking, then adjust from there. Does that make sense?

    I absolutely love this drink. First time I made it was on a lark. 2nd time I was on a mission. I enjoy the cayenne bite in the back of my throat. I like the mixture of fruit juices. I subbed orange juice because no grapefruit juice. The fizzy water makes it seem mimosa-ish. Can’t wait for my 27 year old daughter to try it. So fancy without trying!
