Since it’s Girl Scouts Cookie season and turns out that Samoa cookies are pretty much the number one favorite, so I wanted to make a festive recipe around that. Saw this mini bundt pan I had in my pantry and the shape was too perfect to not make a high protein Samoa cake!

Another fun little thing here – I think I just nailed the perfect cake using plant based protein powder! It turned out so soft, I cannot! And so low calorie, my husband and I were eating multiple at a time.

Ingredients for Healthy Samoa Cake Recipe

These mini healthy samoa cake are made with protein powder and a really clean ingredients; No guilt when having these little bites.

  • Caramel flavor Protein Powder for high protein mini cakes; I used plant based Caramel Coffee Protein from KOS.
  • Unflavored Protein Powder: The KOS plant-based again here.
  • Whole Wheat Pastry Flour
  • Unsweetened Applesauce for a low fat and low calorie mini eggnog cake recipe
  • Unsweetened Almond Milk
  • Melted Butter
  • Baking Powder and Baking Soda
  • Sugar free Caramel Syrup for sugar free caramel marshmallow protein bar!
    I use the sugar caramel syrup from Lakanto (code HAYLSKITCHEN gets you a discount)

For the Protein Caramel:

  • Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
    Or use Peanut Butter Powder.
  • More Caramel Protein Powder from KOS
  • More Sugar free Caramel Syrup
  • Water

And the Coconut

  • Just Unsweetened Shredded Coconut

Sugar Free Chocolate Drizzle on Samoa Cake Bites

  • Sugar free Chocolate Bar or Chocolate Chips to make this a Samoa cookie bar with no added sugar. I use the ones from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Bar or Chocolate Chips.
  • Coconut Oil so the chocolate is easier to melt and more smooth when you drizzle.

How to Make Healthy Samoa Cookie Cake with Protein Powder

These samoa cookie cakes are really super easy to make – just mix everything in a bowl, put into donut pan and bake. And then dunk them in the glaze.

  1. Preheat and Prepare:

Preheat your oven to 380°F (175°C) and grease 20-cavities of a mini cake pan.

  1. Dry Ingredients First:

In a large mixing bowl, combine caramel protein powder, unflavored protein powder, whole wheat pastry flour, baking powder, baking soda. Give it a good whisk.

  1. Wet Ingredients:

In a separate bowl, mix together the applesauce, milk, caramel flavor syrup, melted butter and egg.
Make sure to use melted butter and room temperature milk/applesauce, and see that it’s well combined.

  1. Bring Them Together:

Pour the wet ingredients into the dry ingredients and gently whisk them together. Mix until just combined – no need to overwork the batter.
Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy mini samoa protein bundts.

  1. Fill ‘Em Up:

Using a spoon, fill each mini cake pan cavity about ⅔ full. This ensures they have enough room to rise without overflowing.
Don’t over-fill baking pan cavities or the mini cakes will overflow!

  1. Into the Oven:

Pop those into the preheated oven and bake for 8 minutes or until a toothpick comes out clean. Keep an eye on them, as baking times can vary.
Don’t over-bake the mini cake bites or they might get tough; Remove when the tester/knife comes out just dry; Little moisture is okay.

  1. Cooling Calmly:

Allow the mini samoa bundt cakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely

To make the Protein Cakes:

  1. Whisk the Topping:

Whisk almond butter powder, protein powder, caramel syrup and water in a bowl (adding water little at a time) until its a thick but smooth glaze.

  1. Coconut:

Spread shredded coconut on a pan and bake 3-4 minutes until just browned.

  1. Chocolate:

Microwave the chocolate and coconut oil in intervals of 15 seconds – stirring at each round – so it doesn’t burn.

  1. Assemble

Spread caramel protein frosting on cooled cakes, sprinkle on coconut and drizzle on melted chocolate.

How to store Mini Samoa Bundt Cake?

Store these healthy mini samoa bundt cake bites in an airtight container.

  • Room temperature for 1-2 hours
  • Fridge for a 5-6 days
  • Freezer for 2-3 months; But thaw in the fridge for a few hours before eating

Alternatives for Samoa Protein Bundt Cake Recipe

For the perfect healthy and high protein samoa bundt cake recipe, I would highly suggest using the ingredients and brands I recommended.
I do have some alternatives you can try, but haven’t testing them all, so I can’t say how your cake bites recipe might turn out.

  • Flour options:
    Use All purpose flour or 1:1 Gluten Free Baking Flour (instead of whole wheat pastry flour) in the same amount by weight not cups

    You can try ½ Oat Flour + ½ AP/Whole Wheat Pastry flour (same amount by weight not cups)

    Not sure about almond flour; You might need an extra egg.

  • Salted Caramel Protein Powder
    Use vanilla protein powder
  • Unflavored Protein Powder
    Use ⅓ cup flour; But also reduce the milk to ⅓ cup
  • Unsweetened Applesauce:
    Use Pumpkin Puree or mashed banana (but htis might give a banana flavor)
  • Melted Butter:
    Melted Coconut Oil works well
  • Almond Milk
    Regular milk or other non-dairy milk is okay
  • Almond Butter Powder:
    Use same amount of Peanut Butter Powder
    Or about 3 Tbsp Almond Butter or Peanut butter, but start with only ½ Tbsp of water at a time.
  • Sugar Free Caramel flavor Coffee Syrup:
    Regular caramel coffee syrup

Ingredients

  • ½ cup Whole Wheat Pastry Flour, or AP flour, 60g
  • ½ cup Caramel flavor Protein Powder, Plant-based or Whey-casein, 45g
  • cup Unflavored Protein Powder, Plant-based or Whey-casein, 30g
  • 1 tsp Baking Powder
  • ¾ tsp Baking Soda
  • ¾ cup Unsweetened Applesauce, 180g
  • ½ cup Unsweetened Almond Milk, 120ml
  • 2 tsp Melted Butter, 11g
  • 2 Tbsp Caramel flavor Coffee Syrup, Sugar-free recommended below, 30ml
  • 1 Egg

Protein Caramel:

  • ¼ cup Almond Butter Powder, or PB Powder, 26g
  • 2 Tbsp Caramel flavor Protein Powder, Plant-based or Whey-casein, 11g
  • 4 tsp Caramel flavor Coffee Syrup, Sugar-free recommended below, 20ml
  • ½ Tbsp Water

Coconut:

  • 2 Tbsp Unsweetened Shredded Coconut, about 10g

Chocolate Drizzle:

  • ½ Tbsp Chocolate Chips, Sugar-free recommended below, 7g
  • tsp Coconut Oil

Instructions

  • Preheat oven to 380°F and oil spray 20-cavity mini cake pan (use multiple pans if needed).

  • In a big bowl, whisk dry ingredients – caramel and unflavored protein powder, flour, baking soda and baking powder.

  • In another bowl whisk wet ingredients – applesauce, milk, caramel flavor syrup, melted butter, egg.

  • Add wet mix to dry and whisk until just combined.

    Divide mixture evenly among pan cavities, filling about ⅔-¾ way up.

  • Bake for 8 minutes.

    Toothpick inserted into the center should come out dry.

    Remove from oven and let cool completely.

Protein Caramel:

  • In a bowl, stir together almond butter powder, protein powder, caramel syrup, water (1 tsp at a time).

    Spread on top of cooled cake.

Coconut:

  • Spread shredded coconut on a baking sheet and bake for about 3-4 minutes until lightly browned and toasted.

    Sprinkle over caramel layer.

Chocolate Drizzle:

  • Place chopped chocolate and coconut oil in a microwave safe bowl and microwave about 30 seconds, stirring halfway, until completely melted. Cool slightly.

    Use spoon to drizzle chocolate on bars.

  • Allow to slightly cool and enjoy!
