Our Halloween traditions are simple. Every year, since the kids were young, we get together with friends to spend Halloween evening. We start with a quick meal and then headed out to Trick or Treat around the neighborhood. Although the kids have gotten too old for Trick or Treating, we’ve made new traditions. We’ve also expanded our menu a bit beyond the basic hot dogs or pizza we served when the kids were younger. I wanted an easy Halloween recipe we could all enjoy and came up with Mummy Chicken. It has five ingredients and is gluten free. Best ofall, I can put it together and baked in less than an hour! That’s my kind of recipe.

You’ll need black olives, mozzarella cheese sticks, chicken, gluten free pasta and chicken breasts.

Begin by placing six chicken breasts in a greased 9″ by 13″ pan. Cover them with canned gluten free spaghetti sauce and place them in a 350 degree oven to bake.

While the chicken is baking, cut 8 pieces of string cheese into strips. I used mozzarella since the kids like the taste, but use whatever kind of string cheese floats your boat.

Allow the chicken to bake for 25 or 30 minutes, or until done. While the chicken is baking, boil and drain the gluten free macaroni. If desired, add some salt free garlic and herb seasoning to give the pasta a little zing.

Place 1/2 cup to 1 cup pasta on a plate and top with s piece of chicken. I spread a little extra sauce from the baking dish on top of my chicken to add flavor. Arrange the cheese strips on top of the chicken to look like a mummy wrap. I did this by putting cheese diagonallyacross the chicken and then repeating the strips diagonally the other way. I overlapped some of the strips as well.

Add two black olives near the top for eyes. Garnish as desired.

An easy gluten free recipe for Halloween with only five ingredients!

Ingredients

  • 1 can (24 ounces) Gluten Free Spaghetti Sauce in flavor of your choice
  • 8 (1 ounce each) pieces of string cheese
  • 1 (16 ounce) package gluten free noodles, cooked and drained
  • 6 pieces (about 2 pounds) chicken breasts
  • 12 black olives
  • garlic herb salt free seasoning, to taste, optional

Instructions

  1. Place chicken breasts in greased 9″by 13″ pan. Top with Spaghetti Sauce. Bake 25 to 30 minutes or until chicken is done. Meanwhile, cook and drain the gluten free noodles. Add garlic herb salt free seasoning, if desired. Cut string cheese into thin slices. Place 1 cup pasta on a place. Top with a chicken breast. Add string cheese in diagonal layers to create a mummy look. Add two black olives for eyes.
