We originally shared this recipe back in 2014, and it was time for some updated photos and some tips for making this easy peanut butter cookie cups recipe. I won’t lie, these photos really make me want to make another batch of them right now. I will wait a few days, well maybe. 😉

I love peanut butter and peanut butter blossoms are one of my favorite cookies. In fact, they were a major pregnancy craving for me, so I was making them all the time. Then my cousin told me about how she makes these peanut Butter Blossoms Cookies.

Basically, whenever she makes peanut butter blossoms, she uses mini Reese’s peanut butter cups instead of kisses for her peanut butter loving husband. I love the idea but I wanted to change things up and came up with these chocolate peanut butter cookie cups that are seriously the perfect cookie.

Needless to say, my pregnancy brain just went nuts at the thought of that and I had to give it a try myself! I came up with a recipe similar to my peanut butter blossoms recipe, only this time I made them in my mini muffin tin, to get that perfect little cup shape. Then, when they’re fresh from the oven, press in a peanut butter cup, and viola!

The most delightful peanut butter cookie you’ll ever eat! And that is how I came up with this Reese’s peanut butter cookie cups recipe that is the perfect easy dessert recipe that everyone who loves peanut butter and chocolate will love!

These peanut butter cookies stuffed with chocolate peanut butter cups are amazing. They are also super easy and quick to make. All you have to do is make the peanut butter cookie dough and bake it in mini muffin tins and then add a mini Reese’s peanut butter cup to each one after they come out of the oven.

The longest part is unwrapping the peanut butter cups, but that is what kids are good for, but if yours are anything like mine, they will be sneaking a few peanut butter cups to eat as they are unwrapping them!

Tips and Variations of this Recipe

Change up the peanut butter. I like using creamy peanut butter but you can also use crunchy peanut butter. I

Add a melted chocolate drizzle. You can add a drizzle of dark chocolate or milk chocolate on top of the cookies after they are done cooling.

Add frosting. Want to make them extra special, add a swirl of chocolate buttercream, peanut butter cookie frosting or peanut butter buttercream on top after the cookie cups have cooled.

Roll the cookie dough balls small. You do not want the peanut butter cookie dough to go over the edges of the miniature muffin tins.

You can use any flavor peanut butter cups that you want, I like using the milk chocolate and peanut butter cups but you can also use the dark chocolate peanut butter cups and the white chocolate peanut butter cups.

Can I use store bought Peanut butter cookie dough?

If you are short on time, you can totally take a shortcut and use premade peanut butter cookie dough instead of the homemade peanut butter cookie dough I have included in this recipe to make these Reese’s peanut butter cookie cups and you will still have the perfect combination of chocolate and peanut butter that everyone will love. However I do think you get the best peanut butter cup cookies when you make the homemade peanut butter cookie dough.

Do I need a Stand Mixer?

I love using my kitchen aid but you can use a large mixing bowl and a hand mixer to make this easy recipe.

What is the best Peanut butter for Peanut Butter cookie cups?

I like using smooth peanut butter, you can also use crunchy peanut butter or natural peanut butter to make these cookie cups.

Can I make the dough ahead of time?

Yes! You can make the dough ahead of time and then store it in an airtight container for up to a day in the fridge.

Can you Freeze Peanut Butter Cookie dough?

If you are planning on making large batches of cookies, you can make the peanut butter cookie dough ahead of time and freeze it.

To freeze the cookie dough, make the dough and then roll the dough into individual cookie dough balls. Place the dough balls on a baking sheet and place the baking sheet into the freezer. Once the dough balls are frozen, remove them from the baking sheet and store them in a gallon-sized ziploc bag until you plan on baking the cookies.

How to Defrost Peanut Butter Cookie Dough

The candy in the center may melt if it gets too hot, so you can also pop them in the fridge and enjoy chilled or bring them to room temperature before eating. They’ll last for up to 5 days when kept in an airtight container.

Can I Freeze These?

Yes, these peanut butter cookies freeze well! Allow them to cool completely before freezing, then transfer to freezer container or ziploc bag. If you need to stack layers, be sure to place parchment paper between them. Thaw on the counter before enjoying.

In a large mixing bowl beat the shortening and peanut butter with an electric mixer on medium speed 30 seconds.

Add the 1/2 cup granulated sugar, brown sugar, baking powder, and baking soda.

Beat until combined, scraping the sides of the bowl.

Beat in egg, milk, and vanilla until combined.
